Sweet potato dip

This delicious dip is high in vitamin C and fiber. Ideal as part of a healthy filling on your favourite vegetable based wrap.

Ingredients

2 medium yellow/orange sweet potatoes, cooked

1 can cannellini beans, drained

1 Tbsp. tahini (sesame seed paste)

1 glove garlic, minced

2 Tbsp. lemon juice

½ tsp. turmeric powder

½ tsp. paprika

½ tsp. cumin

Salt and freshly ground black pepper

1 Tbsp. olive oil

 

Instructions

Place all ingredients except the olive oil in a food processor. Pulse to combine, then slowly add the olive oil and process until smooth and creamy.
